Chilli cauliflower Recipe | Chilli Gobi | Gobi Manchurian | Crispy Gobi Manchurian with Henoy

Ingredients :

250 gm cauliflower

½ cup all Purpose Flour (maida)

½ cup Cornstarch

1 tsp Red chilli powder

½ tsp Black Pepper powder

Salt as per taste

Some water

Cooking oil for frying (using disano extra light olive oil)

Sauce :

2-3 tsp oil

1 tsp - chopped garlic- Ginger

1 Medium sized sliced onion

2 tsp – Spring Onion (chopped)

1 Medium sized capsicum

1 Green chilli

2 tsp - Schezwan chutney

1 tsp - Soy sauce

Cornstarch slurry (1 tsp Cornstarch + ¼ cup water)

2 tsp - Honey
Salt as per taste

Garnishing with chopped Spring Onion & Sesame Seeds

INSTRUCTIONS

         firstly, in a large vessel take 4 cup water and get to a boil adding. once the water comes to a boil add gobi. boil for 1 minutes to blanch gobi. do not overcook gobi. drain off the water and pour 1 cup of ice cold water to stop cooking. keep aside.

    Now prepare batter by taking ½ cup maida and ½ cup Cornstarchalso add 1 tsp chilli powder,  ½ tsp black pepper powder and  saltas per taste. Prepare a lump free smooth batter adding water. Add in blanched gobi and dip completely. Further, deep fry in hot oil (double fry-for crispy/optional) you can also shallow fry  for a more healthy option. stir in between and fry till they turn golden brown. Finally, drain off the gobi over a kitchen towel to remove excess oil. keep aside.

Dry Gobi Manchurian recipe:

  • firstly, in a large kadai heat 2 tsp oil and saute 2 clove garlic,1 inch ginger and 1 green chilli on high flame.
  • also, saute 1 onion and 2 tbsp spring onion on high flame.
  • further add 1 capsicum and continue to saute till they slightly change colour.
  • additionally add 2 tbsp Schezwan chutney &  tsp soy sauce and salt as per taste.
  • mix well and saute for a minute.
  • add cornflour slurry.
  • give a good mix until the gravy slightly thickens and turns translucent.
  • additionally, add fried gobi.
  • mix gently making sure the sauce has coated well uniformly. Switch off the gas and add 2 tsp honey and mix gently.
  • finally, transfer gobi manchurian to a serving bowl and garnish with chopped spring onions green & Sesame Seeds.
