Onion Paste :
1 tsp oil
1 tsp cumin seeds
1 tsp coriander
seeds
1 tsp Black Pepper
1/2-inch stick
cinnamon
3 bay leaves
2 Big chopped Onion
4-5 Green Cardamom
2 Black Cardamom
Coriander PASTE
1/2 cup
Coriander leaves
10-12 Garlic
1 inch Ginger
½ Tsp Cumin seeds
3 Tsp grated
coconut
500 grm Marinated Chicken
(½ tsp turmeric
powder, ½ tsp Salt, ½ tsp kashmiri red chill powder, 1 lemon juice)
Oil FOR shallow fry
For Mint flavour Dry Chicken :
1 Big tsp oil
Coriander paste
Onion Paste
2 ½ Tsp Red Chilli
Powder
1 Tsp Coriander
Powder
1 Tsp Garam Masala
Salt as per taste
1 Tsp Black Pepper
powder
A pintch of Nutmeg
powder
2 Green Chilli
Add Fry Marinated
Chicken pieces
1/2 CUP Mint leaves
2-3 Tsp Kashturi
Methi
1/4 cup grated
coconut
Garnish with
chopped fresh coriander leaves
1 lemon juice
1.
To Marinate the Chicken: add ½ tsp turmeric powder, ½ tsp Salt, ½
tsp kashmiri red chill powder, 1 lemon juice. Apply to chicken and set aside
while you prepare the spice paste and curry.
2. Onion
Paste : Add 1 tsp oil, 1 tsp cumin seeds, 1 tsp coriander seeds, 1 tsp Black
Pepper, 1/2-inch stick cinnamon, 3 bay leaves and Saute them for a minute. Add 2
Big roughly chopped Onion, 4-5 Green Cardamom, 2 Black Cardamom. Onion keep
stirring until soft and brown, about 5 minutes.
Once
Roasted spices have cooled, using the Blender Jar for blend the Onion PASTE.
3. Coriander
PASTE : Add 1/2 cup Coriander
leaves , 10-12 Garlic , 1 inch Ginger, ½
Tsp Cumin seeds, 3 Tsp grated coconut into a food processor and grind
into a smooth paste using small amounts of water if necessary.

Add
oil to shallow fry 500 grm marinated chicken from all side until they change
the colour or brown.
5. For Mint
flavour Dry Chicken: In pan heat oil until shimmering, Add Onion Paste & Coriander PASTE, keep
stirring until fragrant and until oil floats on top, about 10 minutes. Season
with 2 ½ Tsp Red Chilli Powder, 1 Tsp Coriander Powder, 1 Tsp Garam Masala,
Salt as per taste, stir once,. Add
marinated chicken pieces and stir until coated in the spice mix. Cover the lid
of PAN and cook for 15 minutes on medium
flame or until chicken is tender. Open lid, stir, and add some water with mint leaves,
Kashturi Methi and grated coconut
and mix, cook for 5 minutes. Serve or garnish with chopped fresh coriander
leaves & grated coconut.
