Instant Dhokla in Idli Steamer

v  1 Bowl(katori) Basan
v  1 Bowl(katori) rava/suji
v  1 tsp chili or garlic paste
v  1 tsp sugar
v  Salt as per taste
v  ¼ food colour
v  1 ½ cup water
v  1 tsp ENO

For Tadka :

v  1-2 tsp oil
v  1 tsp mustard seeds
v  ½ jira/cumin seeds
v  2-3 pinch Hing
v  Some curry leaves
v  2-3 Green chilli
v  1/2 cup water
v  1-2 tsp sugar
v  Salt as per taste
v  2-3 lemon juice
v  Some grated fresh coconut/ coriander (for garnishing)

INSTRUCTIONS


·         firstly, in a large mixing bowl sieve 1 Bowl(katori) Basan and Bowl(katori) rava/suji
·         Add 1 tsp chili or garlic paste, 1 tsp sugar, ¼ food colour, Salt as per taste.
·         Prepare a smooth batter adding 1 ½ cup of water or as required
·         Additionally, add 1 tsp of ENO.
·         Immediately steam the dhokla batter for 10 minutes.



For Tadka :


·         In a pan heat 2 tbsp oil and splutter 1 tsp mustard, ½  tsp cumin,  pinch hing, 2-3 chilli and few curry leaves.
·         Add ½  cup water, mix and get the water to a boil  and add 1 tsp sugar, salt as per taste and 2-3 tsp lemon juice. Mix well.
·         Pour the tempering over dhokla.
·         Garnish with 2 tbsp coconut and 2 tbsp coriander.
·         finally, serve instant khaman dhokla with green chutney and tamarind chutney.
