Maharashtrian Upma Recipe Simple & Quick Breakfast Healthy Recipe
Quick Upma is
one of the most common breakfast item, all over INDIA. Its mainly found Southern as well as Western part
of India, particularly in Maharashtra it is made as breakfast or even as an evening
snack. It is a quick preparation using
common ingredients. Made from rava, and
also make it healthier by adding a lot of boiled vegetables like carrots,
beans, peas along with rava when cooking.
INGREDIENTS:
1 cup - semolina/rava/sooji
1 ½ tbsp - oil
½ tsp - mustard seeds(rai) & cumin
3-4 tsp - Peanuts (moongfali/shingdana)
Some curry
leaves/kadi patta
2 slit green chillies
1 small - chopped onions
1 small - chopped tomato
½ turmeric powder
salt to taste
2 tsp - lemon juice
1 tsp - sugar
1 tbsp - finely chopped coriander/dhania
Instructions
To make
upma, heat the semolina/ rava in a kadhai and dry roast on a medium flame for 4
to 5 minutes. Keep aside.
Heat the
oil in a kadhai and add some mustard & cumin seeds. When the seeds crackle,
add the Peanuts (moongfali) and fry until the peanuts turn to golden and
aromatic. After a few seconds add some curry leaves for fragrance and green
chillies. Saute on a medium flame for a few seconds. Add the onions and saute
on a medium flame for 1 to 2 minutes and add some chopped tomato saute for 1 to
2 minutes.
Add the
roasted semolina/rava and salt, mix well and add 2 cups of hot water, then
cover with a lid and cook on a low flame for 5 minutes, until the water
evaporates. Open the lit and stirring continuously.
Add the
lemon juice and sugar, mix well and cook on a medium flame for another 1
minute, while stir once.
Serve the
upma immediately garnished with coriander.
